Australia holds a special place in my heart. I lived in Sydney for 2 years, from 2016-2018. Moving abroad in general was a huge milestone and proud life moment for me, but then, on top of that, I got to fall in love with a whole new country while I was over there. Australia is probably the most beautiful country in the world, and has some of the nicest people, plus, they serve hot dogs in a piece of folded white bread at garden stores, so how can anyone not get on board with a country like that?

Chilean Sea Bass with White Bean Tomato Butter Sauce

Wow, what a treat this meal was! I recently cooked this recipe for the first time, and was so incredibly happy with how it turned out. The recipe I found actually calls for Barramundi, but our local Whole Foods didn’t have Barramundi, so my husband picked out Chilean Sea Bass. We shared one fillet, and it was probably pushing $20, but wow, it was totally worth it – Chilean Sea Bass on its own is certainly a treat, but it was so delicious in this tomato butter sauce.

Avocado toast with a perfect fried egg

Avocado toast is by far the recipe I go to the most for at-home lunches. It’s so quick and easy and extremely delicious. When Mitcher and I lived in Australia, we lived about a 3 minute walk from work, so we often went home mid-day and had avocado toast for lunch.
