Green chicken enchiladas

I don’t know about you, but ever since I started working from home, I’m spending way more time in the kitchen.

Without commenting on how long I ACTUALLY spend in the kitchen on a daily basis, the number of minutes has definitely increased. Because, for me, one of the big perks about having to work from home during this time of isolation is that I have more time to food prep. When I’m working at the office or out at a client site, I get home much later in the day, and generally won’t come home until I’m completely done with work for the day. But when I’m working from home, I can take a pause during the day, prep some ingredients, throw dinner in the oven, and then finish up another hour of work while it bakes away. I love the flexibility that this brings me.

Greek chicken burgers with tzatziki sauce and cucumber salad

This recipe has a few of my go-to’s in it: I use this tzatziki sauce a lot, whether it’s for pairing with a greek meat dish (like these chicken burgers), or as a dip for cucumbers and pita chips. I also make this cucumber side salad regularly, and it’s one of my favorite go-to salads to keep in the fridge.

Other than the great go-to accompaniaments, this Greek chicken burger is incredibly delicious. With fresh garlic, lemon juice, and even feta cheese in the patty, it’s packed with flavor. Then, when you serve it with a huge dollop of tzatziki and fresh red onions, it’s an absolute meal winner, for breakfast or for dinner.

Buffalo Chicken Spaghetti Squash

YES! A new amazing way to have spaghetti squash! And this is one your entire family will absolutely love.

Now, I’m not saying that you’re going to stop eating buffalo wings (why would I EVER propose that?) but when you want to mix things up, or when you have a different type of chicken but still want the buffalo flavor, this spaghetti squash is a really fun dinner option to try out.

Rosemary peach chicken in white wine pan sauce

How often do you try out new recipes? Do you find it fun, or stressful? Though I love the comfort of cooking my classics and favorites, I really enjoy trying new recipes.

This recipe, which I found on Pinterest, really spoke to me because of the peaches. I loved the idea of using peaches in a savory dish, especially at this time of year when they are in season, and I thought the creamy mozzarella would be a good complement. It’s also nice to have an arsenal of low-carb dishes at hand.

I cooked this recipe a few weeks ago and it absolutely blew me away. It was one of my favorite new dishes recently!

Hungarian rice and roasted chicken thighs

If I had to choose my one favorite recipe of ALL TIME from my childhood, it would be this dish. In fact, I was home visiting my family recently and my mom asked if she could cook anything in particular for me, and Hungarian Rice was the first thing that came to mind.

I make this all the time at home too, and my husband loves it just as much as I do. Funnily enough, my husband actually is Hungarian, so it’s kind of funny that the main Hungarian dish in our household came from my family (with German/English descent), not from his Hungarian descent. 🙂

Vegan Makhani Curry Sauce

I am so excited to share this recipe, but it needs a little background.

I lived in Australia for a few years, and when I was over there, I found and started following Australian food blogger/photographer Sneh Roy, aka Cook Republic. I started following her first because her food photos were breathtaking – but after following her for a while I also bought her cookbook and started making some of her recipes.

It wasn’t until after I moved back to the US, though, that I tried her vegan makhani curry sauce. A makhani curry sauce is basically ‘butter chicken’ sauce – but hers is a vegan version. This recipe is by far the best curry recipe I’ve ever made at home. Read on for my experience with this recipe.
